The next time you plan on throwing out that last bit of wine from an unfinished wine bottle, save it. Measure out 1 tbsp, place in ice cube trays and freeze. So the next time you have a sauce that calls for wine, there’s no need to open up a new bottle. You can also purchase inexpensive bottles of wine and freeze up an entire tray if you use wine to cook often. Freezing wine also prevents it from becoming stale.
